I used to make this recipe with seiten, but I came to prefer the tempeh. Try it both ways, if you want and let me know what you think.
1 C Brown rice
grapeseed oil
braggs amino acids
nutritional yeast
package of tempeh (any variety, expect for the garden vegetable) / seiten (both come pre-packaged)
1 Bunch of brocolli (2 heads)
1/4 of a red onion
1 1/2 med carrots, or a handful of shredded carrots
1/2 C peanutbutter
Cayenne pepper
Cook the rice, my ratio is 1 C rice to 1 1/2 C water, either in a pot on the stove or an electric steamer.
Chop up the tempeh into 1/2 inch sized cubes.
In a pan set to med-hi add 1 Tbsp grapeseed oil and 2 Tbsp braggs.
When warm, add the tempeh and stir.
Chop the broccoli into bite sized pieces and add them to the pan.
Chop the onion into strips and add it to the pan.
Chop the carrot and add it to the pan.
Allow to cook on the med-hi until the tempeh looks browned.
Dust about a Tbsp of nutritional yeast over the veggies.
Sprinkle with cayenne to taste - I like it hotter than most.
Spoon in 1/2 C of peanutbutter and mix well.
Spoon over rice and you're ready to dig in for a rib-sticking, healthfully satisfying meal that's easy to make.
